Notice how coarse the rub spices are.
However, they have no problem shaking out the oversize holes
in the shaker container.

I personally never called softshell turtles cooter, but
called another common Florida hard-shell turtle a cooter.

I guess cooter is so popular in the South that some people
use it as a name or nickname... for example Cooter
(good-natured mechanic) on the Dukes of Hazzard TV show.
Old Man Riggs went to school with a couple of the Taylor
(Gator Hammock) boys and personally uses Cooter Rub (almost
daily). It is excellent for use in olive oil when frying
shrimp as a substitute for Cajun-type seasonings, but I also
like it on pork and chicken as well as a seasoning for soup
and stew. I have mixed it in high concentration with
honey and bar-b-que sauce to create my own hot sauces. I
haven't eaten any softshell turtle since I was kid.
